 In his spare time Chava sought to make something special for us, so he carefully fermented and dried this coffee, processing it as natural coffee to generate a microlot completely different from the majority of his coffee that he processes as washed and thus managed to develop a fruity profile with notes of ripe red plum and a sweetness of raisin with a long and honeyed aftertaste of piloncillo.
