96B Liberica Project is a bold initiative led by 96B Café & Roastery in Vietnam. Its ambition is to bring the Liberica variety back into the spotlight. Through this project, 96B collaborates directly with Vietnamese producers to experiment with innovative fermentation methods; this batch is a perfect example.
The perfectly ripe red cherries were first dry-fermented with LAB-PK yeast in airtight barrels, then pulped to retain only a thin layer of mucilage.
They were then soaked for 48 hours in clean water before undergoing a two-stage drying process: first, 2 days in the sun, followed by 2 weeks in closed bags in a dark room, then a final drying to 12% humidity, before resting for 4 weeks in a dark and cool environment.
