
This exceptional coffee comes from the Villa Pastora farm, located at an altitude of 1,680 meters in the municipality of Palestina, in the heart of the Huila department of Colombia. A true family legacy, this estate was founded by Mrs. Pastora Anacona, who passed on her passion and coffee-growing roots to the family. Today represented by Gerson Mora, embodying the third and fourth generations, the family farm has transformed into a thriving business dedicated to specialty coffee since the 2000s.
This Bourbon Rouge benefits from meticulous and precise processing. The coffee is prepared using the washed method, beginning with an initial 60-hour thermal oxidation at 50°C, followed by a long, 92-hour dry anaerobic fermentation. Careful drying, either solar or mechanical depending on the climatic conditions, completes this exquisite process.
