
This natural anaerobic Maragogype coffee comes from the Emiliano Zapata indigenous community, located in the El Triunfo Biosphere Reserve in the heart of the Sierra Madre de Chiapas mountains in Mexico. This rare nanolot is produced by Doña Antonia Gómez, a respected figure in the Tzeltal community, who cultivates just over two hectares of coffee at an altitude of 1,600 to 1,900 meters. Each year, she harvests approximately 450 kg of Maragogype Criollo, a traditional cultivar with large beans but now endangered, which Beneficio Edelmira is actively working to preserve.
This batch is part of an initiative led by Beneficio Edelmira, a micromill collaborating with 35 small farms in the El Triunfo buffer zone. Their mission: to safeguard heritage varieties by encouraging producers to separate and promote their best cultivars. During post-harvest evaluations, Doña Antonia's Maragogype stood out for its aromatic purity and intensely fruity profile, justifying its selection as an exclusive nanolot and its separation for a premium micro-production.
The processing is carried out with exemplary precision. The cherries, picked at 23° Brix, are sorted and then delivered each evening to the micromill. There, they are washed and placed in airtight GrainPro bags for anaerobic fermentation of 60 to 72 hours at 22°C. They then dry slowly for 20 days on partially shaded African drying beds until they reach 11% moisture content.
