This month's discovery box will feature a truly exceptional washed Burundi coffee! We're excited for you to experience the wonderfully crisp, clean, and sweet notes of this particular Red Bourbon. It has consistently improved each year, and we're delighted to introduce our Blue Bird offering with this fantastic coffee.
Bluebird is a passion project that sprouted from consumer to home brewer turned home roaster! Bluebird has now been alive and thriving for the last six years and have expanded across to 50+ countries.
The Midlands region is known for attracting creative individuals. Its quiet atmosphere, slower pace of life, and clean air offer an idyllic setting. The relative isolation allows people to avoid city distractions and fully focus on pursuing excellence. Beyond their work, residents enjoy trail running, the local rivers and lakes, and the thriving local food scene.
Dario Scilipoti is the owner and founder of Bluebird Coffee Roastery. He is passionate about specialty coffee and aims to put South Africa on the global coffee map.
"We are based in Howick, KwaZulu Natal. A small town at the beginning of a beautiful area of South Africa called the Midlands. I grew up surfing in Durban, an hour away, but when the opportunity to buy a prime property in this beautiful town came up, I couldn't resist. Working with an incredible architect, Nick Crooks, we set out to design and build the roastery/cafe/QC Lab of my dreams. I am so proud and grateful for the space we get to create in!"

- Origami with cafec filters
- 20g coarse grind
- 300ml water at 92C(197F)
- Three equal pours, starting with a centre pour then going circular
- Pour every 35s
- Aim for 2:30 total brew time
