A Taste of Prague with Mazelab Coffee!

This Months Discovery subscription features Ethiopian's Cup of Excellence 2024 winner, Basha Bekele, with Mazelab Coffee. 

Mazelab, is a small roastery based in Prague, Czech Republic. They started in 2023 with a simple goal to explore, to learn and to share beautiful coffees. But more than that they can see themselves as a bridge between the producer and the brewer.

"Coffee does not exist in isolation. It carries the story of the land the hands that nurtured it and the people who bring it to life in the cup. Every coffee we roast is chosen with care aiming for a clean complex and expressive cup that lets the coffee speak for itself."

Prague is a city that makes you slow down. It is full of history and beautiful streets but what we love the most is the rhythm of life. It is not as fast-paced as other big cities so you actually get to enjoy the moment.

"The way people enjoy life here is very similar to how we approach coffee. It is not about chasing trends or rushing through experiences but about taking the time to find what you love and appreciate it deeply. We hope our coffees can give people that moment. A moment to pause to explore and to connect with something beyond just the cup."

This coffee is a reflection of our journey. When we started just over a year ago Basha Bekele was one of the first producers we came across in Ethiopia. The moment we tasted his coffee we knew it was something special. Later that year he won first place in the Ethiopian Cup of Excellence 2024. It felt like confirmation that we were searching in the right places for the right coffees.

This lot comes from Murago Station in Sidama Ethiopia. While it is not from Basha’s winning batch it carries the same dedication and craftsmanship that earned him that recognition.

It is a coffee that feels alive. Vibrant fruit notes balanced by deep florals and a structure that makes every sip feel intentional. It is clean layered and expressive. The kind of coffee that reminds us why we do this.

We brew using our own dripper Solo which we released in December 2024 the same year Jackie competed in the World Brewers Cup final in Chicago.

About SOLO Dripper

Solo is a dripper born from experience. We designed it not just to be unique in shape but to make a real difference in the cup.

Unlike most of flat-bottom drippers Solo has a unique curved bottom and a 40degree angle. This curved bottom naturally guides the water toward the center creating a hybrid extraction somewhere between a conical and flat-bottom brew. The result is a cup with distinct texture balanced sweetness, acidity and a body that just feels different.

But there is something even more special about SOLO. One version of Solo is made from recycled coffee waste.

As brewers we work with coffee every single day. This is one of the ways we can give back. It is not just about making great coffee but also about being responsible with the materials we use. Of course it does not change the cup profile but it feels different in the hands knowing that it is made from something that would have otherwise been wasted.

 

Brewing Recipe with Solo Dripper
  • Coffee : 15 g Water : 75ppm, 240ml at 93 degrees Celsius Grind Size : Medium Total Brew Time : 2:15-2:30min
  • Bloom Pour 60ml of water and let it sit for 40 seconds. Remaining 3 pours 60ml each brewing when the coffee bed is nearly dry. We let the coffee bed almost dry between pours to control the flow rate and contact time maximizing extraction for balance complexity and smoothness. This method brings out the best in the coffee. Clarity complexity and a cup that feels truly expressive.
