This Months Discovery subscription features a beautiful Ethiopia washed coffee from Sincere Coffee Works.
Sincere Coffee Works is a specialty coffee roastery based in Chungju, South Korea. Their philosophy is simple: “We must be proud of the coffee we make – that is our standard.”
For Sincere, coffee is not just a product, but something they must stand behind with integrity. Every year, countless specialty coffees are harvested across the world, and they try to experience as many as possible by roasting small, carefully selected lots to share with customers both in Korea and abroad. "Beyond roasting and serving coffee, we also focus on connecting people through coffee—whether that’s local donation events or cultural exchange projects with roasteries overseas."
Chungju is a small city located in the heart of Korea, surrounded by mountains and lakes. Its calm and unhurried rhythm shapes the way Sincere approaches coffee—never rushing, always working with sincerity. Chungju has also been designated a Cultural City of Korea, carrying forward traditions while serving as a gateway for global communication. In that spirit, we actively engage with partners in the UK, the US, Taiwan, and beyond.

For our friends and subscribers, we are featuring the Ethiopia Guji Bishala Washed.
The name Bishala comes from Bishaan Dawala in the Ethiopian language, meaning “landscape of water.” This selection is processed and roasted to reflect the clarity and vibrancy of rippling waves—bright and transparent flavors at the core.
The cherries are pulped and undergo a three-step density separation, selecting only the highest-density parchment before moving to fermentation tanks for 24–36 hours. During fermentation, the water is changed two to three times. The beans are then fully washed in channels and dried on African beds for 15–18 days until the moisture content reaches around 11%. To ensure even drying, the parchment is carefully turned, shielded from harsh sunlight, and meticulously hand-picked throughout the process.
