A collaboration with Chef's Table and Coffee Legend Pepe Jijon

In celebration of next week's premiere of Chef's Table: Legends, we've teamed up with @chefstableofficial once again for a special collaboration. This time, we're highlighting two standout coffees from a legend in the coffee world - the incomparable Pepe Jijon of @fincasoledadintag.
We worked closely with Pepe to feature two very different processing methods of the sydra varietal, each highlighting a different expression of the terroir. First a fully washed process with a 24 hour cherry fermentation yields a balanced tropical sweetness that reminds us of pink guava and passionfruit.
The second sydra goes through Pepe's cold nature process - A 12 day cold fermentation that's later dried for 40 days. The result is an incredibly juicy mouthfeel reminiscent of mirabelle plums and key lime.
We are excited to share these special coffees either as single releases or a special box set, available now for a limited time.
- R08 - A delicate and sweet coffee with notes of pink guava and passionfruit.
