
A natural-process coffee from the Guji region; its fragrance is reminiscent of freeze-dried roses, candied blueberries, and raspberries. On the palate, it is very sweet, featuring notes of white sugar, milk chocolate, and figs. It has a silky body and a juicy acidity reminiscent of forest fruits. The aftertaste is long, pleasant, and very sweet.
The coffee is harvested by hand, with only the ripest cherries selected and taken to the Hadeso washing station for a second round of sorting. The cherries are dried on raised beds in thin layers, turned frequently to ensure uniformity. As they reach 25% moisture content (the "raisin" stage), the layers are made thicker. The entire process takes 15 to 18 days, with protection from midday sun and night dew, preserving a clean and balanced profile.
