We’re honored to offer our second release from Panama, part of the collaboration project between famed producers Allen Hartmann and Diego Bermudez. Maragogipe is known for is large varietal and umami. This coffee shows how it can evolve to something more fruited and floral.
About the Process
Oxidative fermentation in a culture medium formed by the coffee mucilage and the cascara with a wort recirculation process to increase microbial activity.
