
From producer Axel Palacios and his family farm Los Suspiros, located near Palmira in La Libertad, Huehuetenango. Axel is a fourth-generation coffee farmer and part of the Rosma Coffeelands project, which he runs together with his childhood friends, the Morales brothers.
Los Suspiros Farm sits at 1700 to 1900 masl, surrounded by Chalum shade trees that enrich the soil and protect the coffee plants. The region’s unique microclimate, where warm winds from Mexico meet cool mountain air, creates ideal conditions for slow ripening and exceptional cup clarity.
After handpicking, the cherries are taken to Rosma’s processing station in Huehuetenango city, where they are depulped and fermented for 24 hours before being washed and dried on patios for 7 to 8 days. The result is a sweet and balanced cup with notes of nougat, cocoa nibs and plum.
