Behind this coffee is Dwight Aguilar, who grows coffee in the Cusco region of Peru. Peruvian coffees are known for their smoothness and sweetness, qualities enhanced by high altitudes, fertile soil, and the unique conditions of the Andes. The coffee trees at the Nueva Alianza farm grow on slopes at an altitude of around 1,820 meters. Dwight inherited the farm from his father and gradually began modernizing it. He built terraces to help protect the soil from erosion and switched to organic farming, thanks to which this coffee boasts BIO Organic certification. Dwight Aguilar is a true master of his craft. With his coffee, he became a two-time winner of the Peruvian Cup of Excellence in 2018 and 2021, and to this day remains the only farmer to have won this competition more than once. He is also among the first growers to cultivate the Gesha variety in Peru. In the world of specialty coffee , Gesha is highly prized for its floral notes, citrusy freshness, and distinctive aroma. Its uniqueness is also linked to its more demanding cultivation, meticulous processing, and lower yields, which make the resulting beans all the more rare.
The beans are processed using the washed method. This means that the pulp is first removed from the coffee cherries, and the clean beans are then dried. This allows the variety itself and its natural notes to shine through more clearly in the flavor. In addition, each bean is carefully sorted to ensure that only the highest quality beans make it into the final cup. The beans are then sent to the roastery.
