ABOUT THE COFFEE
This coffee was produced by our friend Diego Bermudez at his farm Hachi. He named it Mikazuki since it evokes the serene glow of a winter crescent moon — a symbol of quiet joy, mystery, and festive anticipation. It captures the feeling of coziness and wonder, like a softly lit Christmas night full of warmth and sweetness. The name suggests something elegant, slightly nostalgic, and emotionally rich, mirroring the coffee's comforting layers of fruit, spice, and indulgence.
Enzymes like pectinases, cellulases, and proteases work magic by breaking down the cell walls of the coffee fruit, unlocking an array of aromatic compounds and natural sugars. The result? Enhanced fruity, floral, and acidic notes that burst with flavor.
These enzymes also speed up fermentation, empowering yeasts and bacteria to transform the coffee pulp into rich organic acids, giving you a smoother mouthfeel and crystal-clear clarity in every cup.
