Our first Christmas coffee celebrate everything we love about the holiday. A naturally processed Castillo from our friend Diego and his new Hachi Project in Colombia. It’s decadent, sweet with just enough herbaceous spices to bring it together.
ABOUT THE PROCESS
THIS IS A CLASSIC NATURAL PROCESS, WHERE AFTER A SELECTIVE MANUAL HARVESTING, THE BEST COFFEE CHERRIES, AT THEIR IDEAL STAGE OF RIPENESS, ARE SPREAD DIRECTLY ON THE COVERED CONCRETE PATIO TO DRY.
LOCATED ON A PLATEAU MORE THAN 1600 METERS ABOVE SEA LEVEL, SURROUNDED BY MOUNTAINS, IN AN AREA WHERE RELATIVE AIR HUMIDITY IS ONE OF THE LOWEST IN ALL OF COLOMBIA, THE DRYING YARD RECEIVES STRONG WINDS TWENTY-FOUR HOURS A DAY, WHICH MAKES IT THE PERFECT NATURAL DRYER.
WITH CAREFUL CONTROL OF THE TEMPERATURE AND HUMIDITY OF THE COFFEES, FINCA EL PARAÍSO ENSURES A NATURAL COFFEE THAT IS ALWAYS CLEAN AND BALANCED, VERY SWEET AND FRUITY, WITHOUT OVERFERMENTED NOTES.
