Hachi

A truly exceptional coffee from Diego Bermudez / Hachi Project. This Colombian washed Geisha is delicious and delicate with tasting notes of lemon, jasmine & honey - a very typical Geisha profile. Fermentation takes place in open tanks where temperature, pH, and duration is monitored and adjusted in real time. In this lot, there are no added yeasts or bacteria, but guided fermentation with the natural microbial population is performed to avoid over-fermentation, stagnation, or spoilage.
