
Details
Thirikwa Farmers cooperative has around 1600 members who deliver their cherries to the Gakuyuini factory for processing. The factory is located on the slopes of Mount Kenya at between 1600-1700 masl. The cooperative has an almost 50/50 split of female and male producers.
Cherries are hand sorted by the producers before being graded by density. The coffee is fermented in shade for 16-24 hours before being washed in grading channels. Finally the coffee is dried on African beds for 21 days until the desired moisture content is reached.
