Tolima ranks among Colombia's elite coffee regions thanks to its ideal climate, high altitudes, and fertile soils. Since 2018, we've been collaborating with top local stakeholders—the ASOPEP cooperative, La Roca Estate, and Tres Rayas—to bring out the best of Tolima's harvests.

This batch, produced using a natural process, comes from cherries grown by the communities of Gaitania, Santiago Pérez, and Planadas. Upon arrival at the drying stations of La Roca Estate and Tres Rayas, the cherries are hand-sorted, floated to remove defects, and then slowly dried for three weeks on raised beds, with regular turning and strict humidity control.

The producers operate between 1,600 and 2,100 m above sea level. They cultivate classic varieties (Caturra, Typica, Castillo, Colombia, Bourbon) as well as rarer and more sought-after cultivars such as Geisha and Wush Wush.

Under the leadership of award-winning Jorge Elías Rojas, ASOPEP and La Roca Estate have become the most influential cooperative in Tolima—if not in all of Colombia.

As for Tres Rayas Coffee, this up-and-coming association boasts Organic, Fairtrade, Rainforest Alliance, and UTZ certifications. It stands out for its environmental commitment: waste from coffee processing is recycled into compost, which is redistributed to farmers to enrich their plots.
