
Cherries from various neighboring farms are received at Inmaculada. They undergo a flotation sorting process to separate out leaves, stones, and low-density cherries. Next, they pass through an electronic sorting stage where cherries at optimal ripeness are selected. This is followed by manual sorting. Finally, the highest-quality cherries are depulped, washed, and subjected to a controlled drying process.
A washed microlot from La Inmaculada’s Fellows Farms project, offering floral fragrance notes alongside tropical characteristics. We detect floral notes of physalis and elderflower, while loquat and pineapple provide the fruitier, tropical notes. It features a smooth body and honey-like acidity, with a long, sweet finish.
