Our second collaboration release with our friends at Chef’s Table, in celebration of their 10th anniversary. For this limited edition offering we worked closely with legendary producer Pepe Jijon of Finca Soledad in Imbabura, Ecuador.
This is a box set of both R08 + R09 100g offerings,
featuring two very different processing methods of the sydra varietal, each highlighting a different expression of the terroir.

First a fully washed process with 24 hour cherry fermentation yields a balanced tropical sweetness that reminds us of pink guava and Passionfruit. The second sydra goes through Pepe’s Cold Nature process - A 12
Day cold fermentation that’s later dried for 40 days. The result is an incredibly juicy mouthfeel reminiscent of mirabelle plums and key lime.
