Over the years the coffees we’ve been buying from Ethiopia have gotten a bit cleaner in general. The anaerobics these days are what the naturals used to be, while the naturals these days can sometimes pass as washed. Where does that leave the washed coffees then?
Well, they are just as good as they’ve always been. Like this Arsosala from the Guji region, in the south east part of Ethiopia.
Arsosala refers to the washing station that was build in 2016, and where about 1,200 farmers deliver their cherries. Farmers in the region began cultivating coffee fairly recently. As a result, the trees are young and their quality and yields are high. Arsosala pays a 5-10% premium to incentivize high-quality cherry selection.
