
From the renowned farm, Los Nogales, this coffee is produced by Oscar Hernandez. Last year we visited Oscar and his family, saw first hand his commitment to growing , harvest and processing before we cupped in their lab. We selected it to use in the World Coffee in Good Spirits Championships, where Sandro Roth used it to place 2nd.
This year, the Bourbon Pimienta returns.
This Bourbon Pimienta has undergone fermentation stage, where the coffee is de-pulped on a modified depupling machine and then a 24 hour fermentation utilising yeast and mosto. It creates a coffee that is exceptional, intense and complex.
