This Months Discovery subscription takes a look at one of our closest partners, Coffee Collective.

Founded in 2007, The Coffee Collective is to this day 100% owned and run by Peter N. Dupont, Casper Engel Rasmussen and Klaus Thomsen. With several competition awards in the bag, including gold in both the World Barista Championship and World Cup Tasting championships, they continue to explore exciting coffee experiences.

Since our foundation, we have partnered with Coffee Collective to serve coffees at our cafes. We believe their approach to sustainability and producer relationships is world class. 

 

 
The Roastery at Coffee Collective

Last month we had the privilege to sit down with Adam and chat about Copenhagen at their beautiful location at the Torvehallerne. Its a magical city full of character and elegance. We fell in love with their latest release, AGA, and wanted to share it with our subscribers. A beautiful coffee from Ethiopia that's light and elegant with refreshing acidity. its quite floral and fruity with aromas of bergamot, peach and grapefruit. We're honored to share it with you

Suggested Method
  • Weigh out 16 g of coffee and grind on a medium setting
  • Place the filter paper into the filter cap, screw on the chamber and rinse with hot water.
  • Put coffee in the AeroPress chamber and let it rest on top of a cup or server. Place on a set of scales and tare.
  • Pour in 230 g water making sure the coffee and water are mixed well.
  • Insert the plunger, pull it up slightly to create a small vacuum so coffee doesn't drip through.
  • At 60 seconds, remove the plunger and stir 3 times with a spoon from front to back.
  • Re-insert plunger at 1:10, remove the scale and press down slowly finishing around 1:30.
  • Let the coffee cool for a few minutes, swirl and enjoy!.
