A Taste of Guadalajara, México with Triste Tigre!

Triste Tigre opened in 2023 in a quiet shared house in between the iconic Parque Rojo and Guadalajara's Expiatory Temple.

"Triste was a project created between my partner and illustrator Zyan Méndez and myself, Edson Hernandez, as coffee bean scout and now main roaster!"

Triste wanted to create a space that combined their love for coffee and art, one that felt inviting to people like us.

"El Triste, as we often refer to it in endearment, specializes in featuring a variety of flavorful and unique coffee beans from different regions across México."

In these past three years, Triste Tigre has been present in COE México in 2024, SCAJ Tokyo in México's International Stand in 2025, as BNP Judge in San Diego WOC 2026, and delivered roasted coffee in UK, Tokyo and Spain. Currently they are also roasting for other brands under our roaster Tostador Colectivo.

Guadalajara, México is a city proud of its food, culture and artistic scene. Home to the iconic tequila and mariachi music. You can walk through the city and find amazing places to enjoy a colourful variety of options with a high standard in hospitality and quality. 

"Living in Guadalajara changed our approach to coffee due to its closeness to incredible producers growing coffee in the bordering states of Colima and Michoacán.

The current local scene is open for more specialty beans, origins and different roast profiles. Our routine involves receiving the beans, analyzing (sorting), roasting and testing. We believe the present interest of our clients and colleagues helps us to grow and perfect our profiles."
