A Collaboration with Methodical Coffee!

The time has come, I am so excited to announce our collaboration with Methodical Coffee!
From my perspective, Methodical is a pioneer in specialty coffee. When I first entered the industry ten years ago, Methodical was one of the first names I knew and provided some of my first memorable brewing experiences. It is an honor to work on this project together. Methodical remains consistent, innovative, and inspiring. At Dayglow, we aim to adapt to the evolving coffee landscape by working with like-minded partners to inspire our community both locally and globally.
Founded in Greenville, South Carolina in 2015, Methodical Coffee is a specialty coffee roaster rooted in curiosity and intentionality. They believe exceptional coffee should be as welcoming as it is exciting, and their approach to their craft with equal parts precision and personality. Methodical is passionate about discovering remarkable coffees, building meaningful relationships, and sharing what they love with the people around them. At the end of the day, they are just a bunch of folks who care deeply about good coffee, good people, and making everyone feel right at home.
"Greenville, South Carolina is a small city that punches well above its weight. Tucked into the foothills of the Blue Ridge Mountains, it’s a place where natural beauty, Southern charm, and a surprisingly vibrant culture all meet. Our downtown is small enough to feel like home, but packed with and incredible food and beverage scene. Falls Park and the Reedy River run right through the heart of it all, while the mountains, trails, lakes, and winding Blue Ridge roads are just a short drive away. Greenville has a way of feeling both lively and laid-back, beautiful without being flashy, ambitious without losing its warmth. It’s a little corner of the South we’re incredibly proud to call home."

A lot of Methodical's heart is bringing an elevated product to an approachable experience. They try to find the pinnacle of sweetness in their coffees, and believe that there is room for all who are seeking to enjoy specialty coffee. Greenville is much this way in its food and beverage scene, as well as its charm and beauty.
Yessica and Diego are siblings from Pitalito, Huila, and the fourth generation of a coffee-growing family. Their great-grandfather started the family’s coffee farm, followed by their grandfather and parents, but it wasn’t until Yessica discovered specialty coffee while studying and teaching at SENA that she began to see new possibilities for the family’s coffee.
This Papayo is an exceptionally balanced coffee, full of character, with bright notes of yellow fruits layered over a silky texture that recalls caramel and dulce de leche. The combination is both elegant and comforting, making it one of the most memorable expressions of this variety we’ve ever worked with.
The process begins with 24 hours of oxidation, allowing the cherries to develop complexity before being depulped. The beans then undergo 60 hours of fermentation in open tanks, a stage that intensifies sweetness and refines the structure of the cup. After fermentation, the coffee is washed and carefully dried, a slow process that preserves and elevates the delicate flavors inherent to Papayo. What makes this lot stand out is not only the clarity and balance of the profile but also the way it captures the essence of this rare variety.
"We’re incredibly excited to share this coffee with you. Papayo is a variety we’ve had the opportunity to work with a few times, but this particular lot stopped us in our tracks. It’s everything we love in a coffee—distinctive and exciting, but also incredibly balanced and easy to come back to.
At Methodical, we’re always looking for coffees that create a sense of curiosity while still being genuinely enjoyable to drink, and this one does exactly that. We hope you’ll take your time with it, try it a few different ways, and find as much to love about it as we have."
