A Taste of Bristol with Sweven!
Sweven Coffee, Bristol

Sweven is a coffee roastery and café based in Bedminster, Bristol. Founded by Jimmy and Aga Dimitrov in 2019, Sweven is the result of more than a decade spent travelling, competing, sourcing, and building relationships throughout the coffee industry.

“Everything we do begins with the producer. We look for coffees with a strong sense of place, work with partners who share our values, and roast with the intention of expressing each coffee as clearly and honestly as possible. For us, coffee is about craftsmanship, connection, and sharing something meaningful.”

Bristol has a long history of independent businesses, creativity, and craftsmanship. It’s a city that has always been willing to do things differently, while valuing quality and community in equal measure.

“Bedminster has become our home. Being surrounded by other independent businesses and familiar faces has shaped the kind of place we wanted Sweven to be — a welcoming space that’s as much about people as it is about coffee.”

Bristol encourages independence. Rather than following trends, the team at Sweven has always focused on building something that reflects their own values.

That means taking their time with sourcing, working closely with producers they trust, and roasting in a way that respects the work that’s already been done at origin. Sweven believes the best coffees don’t need to shout. They simply need to be treated with care.

Buku Hambela is produced by smallholder farmers in the Guji Highlands of Ethiopia and processed at the Buku washing station, managed by Esayas Bareso. It’s a naturally processed lot made up of the Ethiopian varieties 74110, 74112, and 74158.

"It’s a coffee that captures everything we love about this region: elegant florals, ripe stone fruit, and vibrant sweetness. We find notes of peach, grape candy, and orange blossom, with a juicy, clean finish that keeps you coming back for another cup. It’s expressive, refined, and a great example of why we continue to return to Guji year after year."
