This month we are featuring The Barn from Berlin. They have been roasting coffee in Berlin since 2010. The Barn has been leaders in sustainability and have been known to source the highest quality coffees.

The Barn Berlin Cafe
I was lucky enough to cup this coffee with Michael Beyne, The Barns North American partner, and this coffee stood out on the table against many coffees from many different roasters. In the cup we found juicy notes of blueberries with a lingering soft note of eucalyptus. The Dambi Uddo is an exceptional coffee from the Guji Highlands in Ethiopia, known for producing some of the finest coffees in the region. Situated at a high elevation of 2145m, the estate offers complex flavor profiles, and we are proud to present the entire harvest from our exclusive plot, Gatame. Their naturally processed lot showcases intense flavors of blueberry, bergamot, and black tea, with notes of strawberry and tropical fruits emerging as it cools. The rich and velvety texture makes it a truly delightful experience.

Suggested Pour Over Method
- Bring about 320g of water to boil
- Grind coffee to a medium coarse
- Wet coffee filter with hot water to rid paper taste
- Throw out the water and place coffee in the filter creating a flat bed
- Pour 50g of water in a circular motion only wetting the coffee to allow coffee to bloom
- Wait 30 seconds and pour your next 100g of water to reach 150g
- Wait another 30 seconds and pour your next 100g of water to reach 250g
- Wait another 30 seconds and pour your last 100g of water to reach a total of 300g
- Your end time should be around 2:30-3:00 minutes
- Swirl your cup and smell the aroma of dark berries and a syrupy sweetness. Sip your cup to find notes of blueberries and a tea-like floral, enjoy!
