Carmen Estate in Panama is an Award-winning coffee estate that produces high-quality Arabica varieties. In 2023, they won Best of Panama with their washed gesha and set a record OF 96.50 pts in total cup quality. We are so happy to release this Pacamara variety from Carmen Estate.

Taste description: In the cup of this exceptional natural Pacamara you will find honey and spices in the aroma with a winey acidity and an aftertaste of juicy black cherries. The overall cup is full of flavors and very sweet.

Amount: Our specialty coffee range comes in 250-gram jars of whole beans roasted for filter or slightly edgy espresso, packed and shipped on demand for maximum freshness. These coffees hit the sweet spot between specialty coffee and competition-style coffee, with a taste profile that is both exciting and unique.

Winey Process: Cherry are selectively hand harvested and laid to sun dry on patios. As the cherry dries, workers rake the parchment frequently to ensure even drying and remove any damaged beans manually.

It is evident that the producers place the utmost care into processing this coffee. The coffee in this lot was processing using traditional Natural processing techniques. They call the processing method ‘winey’ process to differentiate this smaller-scale processing from the larger-scale Natural processing that is common throughout Brazil.

Story: Carmen Estate is an award-winning family farm situated at 1,700 - 1,750masl. It was founded by Efrain and Carmen Franceschi, who began cultivating arabica on their various estates in the heart of the Panamenian Barú Volcano region. It is now run by Carlos Aguilera Francheschi and his family. The estate produces around 1,200 bags per year of arabica of different varieties, both washed and natural process. The farm's top lots consistently place highly in the annual 'Best of Panama' competition and took first place in 2023.

Region: The Volcán Valley, home of Carmen State, at an altitude of 5,600 ft (1,750 meters) is the most important area in mountain and shade grown coffee plantations of The Barú Volcano region in Panama. The valley takes the courses of the Chiriquí Viejo river as it flows down from the blue mountains of Cerro Punta to the Pacific Ocean. Their rich volcanic black soil and superb drainage are ideal for the cultivation of our Arabica Coffee. The valley's micro-region is heavily influenced by its proximity to both the Pacific and Atlantic Ocean. The cool, frost-free nights typical of the area are coupled with dry, sun-drenched days which, together, create optimal growing conditions.

 

Volcan’s pairing of excellent volcanic black soils with an outstanding microenvironment has led to its recognition as one of the finest coffee growing regions of Panama.
