This is our second year exploring the exciting region of Sierra Mazateca, and it is quickly climbing our list of places to visit once travel resumes. In the cup we find excellent depth and structure, a refined dark chocolate base, a subtle orange acidity, and a berry compote sweetness.

Hand picked at peak ripeness. Floated to further remove defects and depulped on the day of harvest. Dry fermented for 24-36 hours. Dried on raised beds for 10-15 days.
