Oaxaca is a new region for us as we continue exploring Mexico’s potential. It is also one of the newer places we are most excited about. In the cup we find a deep, syrupy sweetness, darker fruits of plum and blackberry, and a soft lemon acidity.

1,800 - 2,000 masl
Hand picked at peak ripeness. Floated to further remove defects and depulped on the day of harvest. Dry fermented for 24-36 hours. Dried on raised beds for 10-15 days.
