It’s a bit herbal with a honey-like sweetness. It has a punchy acidity that reminds me of a nice Kenyan coffee. But it’s still clean and balanced with notes of lemon grass, blueberry and a hint of sage.

Details
I spent this whole morning trying to find out what the hell an ombligon is. While typing it, Google spelling is telling me it’s just a typ-o, so that didn’t help. Then I tried drawing one, starting off with the Pentagon, but they are pretty useless, so I went all the way up to the octagon, but couldn’t do the ombligon.
So I thought maybe it’s a brewing device, like the Paragon… But it’s not that either.
Finally gave up and called Luis Anibal to see if he knew what it was and he told me it was the name of a rare coffee variety, a natural mutation of an Ethiopian landrace. Ombligon means “belly button” in Spanish referring to the elongated shape of the bean.
