
This lot comes from Koke, a washing station just outside Yirgacheffe town in the Gedeo Zone. The area is known for producing some of the most distinct washed coffees in Ethiopia.
Cherries are grown in small garden plots and delivered daily by local farmers, then carefully processed using ten fermentation tanks for a clean and consistent profile.
It features three indigenous varieties, Wolisho, Dega, and Kudhume. These cultivars have been passed down through generations and are prized locally for their balance, resilience, and complexity.
Ripe cherries are washed and then pulped to remove the majority of skin and fruit from the bean before its fermented.
Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the coffee.
The coffee is then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
