This batch is produced by the Baragwi Farmers Cooperative Society, an association made up of around 1,700 small producers. The latter also use the Muchagara washing station, whose name derives from the homonymous village in which it is located. The station is the oldest in the Kirinyaga region.
For our Kariru AA microlot, composed only of the SL-28 and SL-34 varieties, the pulp was mechanically removed from the cherries after harvest, then the beans, still covered with mucilage, were placed in fermentation tanks, with a minimum amount of water, for 12-24 hours. When a good part of the mucilage begins to detach from the beans, they are washed with clean water. At this stage, the immature beans characterized by a lower density, are eliminated. The process is then repeated. Finally the grains are dried on raised beds. They are usually covered during the hottest hours of the day and during the night.
