FERMENTATION

 

A luscious aroma with notes of
70% chocolate, cherries, and
hazelnuts. This Impano batch,
naturally processed through
anaerobic fermentation, stands
out for its balanced yet
distinctive natural coffee
profile, featuring a silky body
and moderate acidity. On the
palate, fruity notes of
watermelon and apricot prevail,
with a sweet aftertaste of
cinnamon and sugarcane.
The experimental coffee Impano
(Gift) aims to address poverty
in the Nyamasheke district of
Rwanda, where despite being a
significant coffee producer, the
community faces malnutrition and
destitution. Fermented
anaerobically for 100 hours,
this coffee offers an
exceptional flavor cherished by
coffee enthusiasts. Beyond a
mere beverage, it serves as a
connection between consumers and
local small-scale producers,
uplifting the community's
livelihood.
The process begins at the
washing station, where cherries
are sorted and floated to ensure
quality. Subsequently, they
undergo anaerobic fermentation
and meticulous grading before
being sun-dried on elevated
African beds for 20-30 days. The
coffee is carefully stored, then
hulled and sorted by trained
women before being packed for
export in GrainPro bags and jute
sacks.
