Finca Soledad is a meticulously managed farm nestled within 120 hectares of lush natural forest in the picturesque region of Imbabura, Ecuador. Situated at an elevation of 1515 meters above sea level on a compact 4-hectare plot, the farm, overseen by Pepe, specializes in cultivating Typica Mejorado, Sidra, and Gesha varieties. In the cup, this coffee from Finca Soledad presents an exceptionally clean profile characterized by vibrant notes of red berries such as currants, pomegranate, and cranberry, accompanied by delicate floral undertones of orange blossom and jasmine. The acidity is refreshingly crisp, while the sweetness lingers on the palate, leaving a lasting impression.

Mejorado from Ecuador has consistently stood out as one of our favorite coffee varieties in recent years, and Pepe Jijon's dedication to perfecting its processing at his biodynamic, organic farm, Finca Soledad, is truly evident.

Cherries are picked at peak ripeness and floated to remove defects. Next is a 48 hour in-cherry fermentation before the coffee is depulped and fermented for 48-hours with mucilage. The seeds are then washed with clean water followed by 40 days of slow drying in a dark room.
