Chambakú is one of our most
beloved farms at Nomad, and
taking advantage of the fact
that we are now in Colombia
Chambakú season as our house
espresso (you've probably
already tried it), we now bring
you a slightly more special lot
from the same producer, Juan
Felipe Restrepo. In this Pink
Bourbon Semi Washed coffee, we
are positively overwhelmed by
fruity notes of raspberries and
green melon in fragrance, and
then on the palate, we really
enjoy its very sweet flavors of
toffee and caramel.
Finca Chambaku is a continuously
evolving project. In January
2021, they purchased Renacer,
the farm located at the top of
the mountain, and decided to
experiment with various
varietals, starting with two
varieties: pink bourbon and
Cenicafe 1. For the 2023
harvest, the new processing
center was officially
inaugurated, where coffee
protocols are being developed in
bioreactors, aiming to stabilize
cup profiles in larger volumes
and allowing for consistent
replication. This is the first
official harvest of Chambakú pink
bourbon.
Manual harvesting of only ripe
cherries. Upon arrival at the
processing center, a batch
process is carried out to clean
and remove less dense cherries.
The coffee undergoes a 10-hour
oxidation process. The next
morning, the cherries undergo
manual selection. Subsequently,
the cherries are depulped, and
anaerobic fermentation begins
for 18 hours in plastic tanks
before moving to the drying
area.
Drying process carried out with
a 3-level mechanical silo to
ensure a more stable drying
phase. Drying for 5 days with
special care to ensure the
coffee does not exceed 35
degrees Celsius. Coffee prepared
as EP with 95% above mesh size
15. Moisture level of 10.6% and
water activity of 0.57.
