Coffee Collective- Vista Hermosa Maragogype

Coffee Collective- Vista Hermosa Maragogype

Regular price $28.00

The coffee is the Maragogype variety and from the Edlyna microlot. Maragogype is related to the Typica variety. The taste is extremely clean and sweet with a velvety, full body. Some even find it to have an enhanced umami flavour. That said, the thing that sticks out the most is the size. The Maragogype can grow twice the size of a regular coffee bean. The size of the bean has inspired the nickname, The Elephant Bean.

During the past decade we have been fortunate to visit Huehuetenango which is the region of Guatemala that the farm is situated in. When walking the mountains where the coffee grows you start noticing natural springs flowing down the landscape. The springs are a very favourable advantage for Finca Vista Hermosa, since Huehuetenango has one of the lowest annual rain falls in Guatemala. This water is used for processing the coffee.

When processing the coffee, the people of Finca Vista Hermosa are very careful and aim for a uniform end result. To avoid an uncontrolled process, the berries are pulped the same day as picked. In the last step of the process, the coffee is laid to dry in an even, thin layer to avoid mould in the bottom part.
